Spice Box

A spice is a dried seed, fruit, root, bark or a vegetative substance. It may be used to flavour a dish or to hide other flavours. In the kitchen, spices are distinguished from herbs, which are leafy,

green plant parts used for flavouring or as garnish.

Spices also are used for other purposes, such as medicine, religious rituals, cosmetics, perfumery, or for eating as vegetables. For example, turmeric is also used as a preservative; liquorice as a medicine; garlic as a vegetable.

Adding spices requires lots of training. You need to try the spices carefully and more slowly – with practice everyone will find their own style. In beginning is good to try out 1 to 5 spices. With experience, you can increase the amount of spices.

 

Here is a small list of spices you can put in food item.

Mince meat. black pepper ,white pepper,  allspice, capsicum powder, chili, coriander,cayenne pepper, pizza seasoning and garlic powder.

Fish. black pepper, white pepper, allspice, green pepper, chili pepper, rose pepper, curry, dill (seeds), lemon pepper, capsicum powder, turmeric, coriander, red pepper powder, onion powder ,basil, chervil, cilantro, cumin, marjoram, tarragon, thyme.

Lamb. black pepper, white pepper, green pepper, rose pepper, garlic powder, marjoram, rosemary, cayenne powder.

Potato. black pepper, capsicum powder, cumin, capers, parsley, flavoring salt, garlic salt, herb salt, dill (fresh), paprika, rosemary – roasted potatoes, thyme adds color and taste.

Carrot. white pepper, anise, lemon pepper, chervil, nutmeg, tarragon, mace.

Beef and pork. black pepper, white pepper, green pepper, allspice, rose pepper, cayenne pepper, chili pepper, steak seasoning, capsicum powder, ginger, bay leaf, tarragon, rosemary,chives, sage.

Rice. chili, black pepper, lemon pepper, turmeric, curry, capsicum powder, saffron, spicy pizza, cilantro, dill (seed).

Mushrooms. rosemary, tarragon, thyme.

Pasta. Basil, chives.

Chicken. Basil, chervil, ginger (dried), sage, tarragon.

Bean. bay leaf, chili powder, cilantro, cumin, bean stews sage thyme.

Eggs. marjoram, tarragon.

Hi there and welcome to my kitchen

This site is dedicated to food only, has lots of things since baking, recipes and spices. I am not yet a professional… just someone who is learning to cook. I am doing lots of research, reading books to gain experience in the area. Cooking is my passion and love to create new dishes.

About me: I am Patricia Santos Anttonen and I live now  in Finland, but I used to live in Portugal. I came to Finland and had to think  where to start to gain experience here. I applied in different schools to study. I got a place in one Adult Education Professional School and  I was studying there Cooking.  I also worked/work practice at the same time in different restaurants. During studies I saw and learned lots of different dishes and styles. From French to Italian food.

I have traveled a lot when I was kid with my parents and saw different life styles and the food in every places had different taste. In my site you will read also about places where I traveled. Its good to have knowledge about other countries and their tradition. Isn’t it?

My English its not so perfect in writing i may have lots of errors but i try to write that you can understand.

Full moon Apple pie

The apple pie has more flavor in the base, where you find the almonds and cinnamon taste.

base/dough
100 g butter
1 1/4 dl sugar
1 egg
2 dl of wheat flour
1 1/2 teaspoons baking powder
1 cup ground almonds
1 teaspoon of cinnamon
1/2 teaspoon ground cardamom
1 dl natural yogurt (optional)

filling
2 (300 g) large, tart apples
1 1/2 tsp cinnamon
sugar or honey, i added sugar.

Yoghurt and custard (optional) i did not made had in the fridge vanilla cream.
2 dl natural yogurt
1 tablespoon vanilla sugar
2 teaspoons sugar
(1/2 cup minced or ground almonds)

Recipe
Start with the base/dough preparation by foaming soft butter and sugar. Add the egg , and mix together dry ingredients and yogurt.

Spread the base to a 24-25 cm into a pie cassarole from the bottom and sides . Pre heat the oven to a 175 ° C.
Peel the apples , remove the seeds. Slice the apples and spread them over the base.
Sprinkle with cinnamon and sugar or honey.

Bake in the oven in the center of the 175 ° C for about 35 min.
Provide the full apple pie yogurt with vanilla sauce .

Yoghurt and custard
Mix the ingredients together. You can add 2 tablespoons minced or ground almonds.

Salmon spinach and dill potato bake recipe

It takes 30 minutes to prepare. To Bake 50 minutes.

Ingredients:
600 g potatoes
150 g frozen spinach or 350 g of fresh spinach.
2 – 4 salmon fillets cut in small pieces.
1 onion finely chopped
1 lemon juice of it or 05 dl of lemon juice
60 g of butter
50 gr of flour
6 dl of milk
150 fresh dill or 2 teaspoons of dried dill.

How to prepare
1. Unpeel the potatoes and cook in a pan with water for 15 minutes.

2.If you have fresh spinach you need to wilt them first. (fry the leaves in a pan with olive oil until they get wilt/shrink after you need to refresh them in cold water). Or you can just pour boiling water to wilt the spinach. Drain and squeeze out all the water as much as possible. Set a side the leaves in a bowl.

3. Fry in olive oil, onion and garlic for 4 minutes. When they start getting cooked add lemon pepper, salt and lemon juice and in the end the spinach. Stir them gently until the spinach mixes in between. Taste if it needs any more seasonings.

4.Make the white sauce. Melt the butter in a pan over a medium heat. Add the flour and cook stirring for 1 minute. Cook for 5 minutes stirring until thickened. Season with dill and let it cool aside. Pre heat the oven to 200 dg.

5.When the potato are cool down slice them round to pour over the salmon. In a oven trey pour the salmon and sliced potato and in top the white sauce. When the oven is pre heated put the oven trey and cook it for 35 – 50 minutes or until the potato gets brown.

chocolate mousse only with 4 ingredients

A simple recipe you can make it in 5 – 10 minutes it does not take long. If you do not have any idea to make desert you can make this lovely and smooth chocolate mousse. You can eat it at any time. Only takes 5 steps to make it.

3 eggs
6 spoons of sugar
250 gr of chocolate bar or chocolate powder
1 can (225 ml) table cream start from adding half if it is already enough sweet no need to add the rest of it.

Melt the chocolate in the microwave or you can melt it by heating in the stewpot.

Add the table cream to the melted chocolate.

Beat the egg whites and add the spoons of sugar.

After all is done gently mix the melted chocolate and egg whites.

Place in refrigerator for about 2 hours is ready to serve. You can decorate with chocolate shavings or be just simple chocolte mousse.
